Orange Cake with Thyme

There are times when we crave something sweet but lack the energy to make anything too complicated, and thus these cakes are perfect for those moments. They satisfy your sweet tooth and don’t leave you feeling too full. The sweet flavor of the oranges and peppery fresh taste of thyme are the perfect match, while these cakes can be made with many other creative combinations!

INGREDIENTS

Cake:

  • 340g granulated white sugar
  • 270g whole eggs
  • 170g heavy cream
  • 3g salt
  • 270g all-purpose flour
  • 5g baking powder
  • Zest of 3 oranges
  • 95g melted butter
  • a pinch of ground up thyme

Syrup:

  • 150g orange juice
  • 90g sugar
  • 50g water
  • a couple of leaves of thyme (depending on the strength of flavor)

Glaze:

  • 200g confectioner’s sugar
  • 80g orange juice

INSTRUCTIONS

  1. Preheat oven to 180°C/356°F.
  2. Mix eggs with sugar, ground thyme, salt. Combine flour and baking powder.
  3. Add zest, heavy cream and mix. Then fold in dry ingredients, make sure no clumps form.
  4. When the butter is warm (at or under 45°C), add it to the mix.
  5. Grease the desired molds, you can make this cake with any king and they will come out well. If you want to make them in a more traditional way, use a loaf pan, if you want to innovate a little you may use square silicone molds as well. These come out great for individual portions.
  6. Pour batter into each mold about halfway full. With individual molds place a cube of butter on top of each one. With a loaf, place a line of butter on top of batter, this will allow it to open up when baking. Bake at 180°C/356°F, until golden brown. For a loaf pan this will take around 30-40 minutes depending on your oven. With the small 5 cm silicone squares I used it took about 25-30 minutes.
  7. While cake is baking prepare the syrup by adding all ingredients into a saucepan, and dissolving the sugar. Strain, and cover with plastic wrap.
  8. Strain orange juice, and sift confectioners sugar. In a bowl place both ingredients and mix well. Set aside.
  9. Once the cakes are done, if you make individual portions take out of mold and dip them into syrup, letting them absorb some liquid. If you made a loaf, pour it on top.
  10. Finish it off with the glaze and enjoy!
