With lots of time at home, you should definitely be upping your skills on the desserts front. And what’s best than replicating that buttery orgasm you get when you dig in to a soft-baked cookie from Ben’s Cookies in the UK? Ugh.
Here’s a quick recipe on how to get to heaven in just under 30mins!
INGREDIENTS

200g self raising flour

200g plain flour

Pinch of salt

170g unsalted butter cut into chunks

200g dark brown soft sugar
-
100g caster sugar

1 tsp vanilla extract
-
1 egg & 1 egg yolk

100g milk chocolate, dark chocolate or white chocolate (the best!) for your toppings according to your preferences
INSTRUCTIONS

Preheat the oven to 200 degrees, and lightly grease your baking tray

Weigh out your two types of flour into your mixing bowl and add in your pinch of salt.

Place your butter in a bowl to melt it and then leave it to cool.

Measure your dark brown, caster sugar and vanilla extract into a bowl and combine thoroughly with the butter mixture.

Break the eggs into a cup, and once the butter mixture is completely cool combine the two together.

Combine the butter and flour mixtures and stir well until everything has combined. Make sure the dough becomes quite consistent and don’t worry if it’s too sturdy

You should be able to get about 12 cookies from this mix, so break the dough into palm sized balls (roughly the size of a table-tennis ball) and press in your cubes of chocolate. You should make sure you’re occupying almost the whole top surface of them and pressing them until the mid-point of the cookie’s height. Aim for a ratio of 2:3 for chocolate:dough

Bake for about 10 minutes in the oven (you still want them to be slightly soft) before leaving them to cool and then tucking in!
