News: George Korres brings the Greek bakery concept to New York

Fournos Theophilos, a new Greek market and cafe, right in the heart of Manhattan opened last week. And despite our excitement on the Greek produce being readily available in the Big Apple, what strikes us is thew story behind it.

It started as a partnership between George Korres, a pharmacist, and Nikolas Paschalakis, a computer expert, who wanted to showcase Greek food with a contemporary twist. For that they hired two chefs originally from Greece, Yannis Tsiakos and Dionisis Liakopoulos, that have set the bar real high. And to top it all off, Korres’ in-house creative agency The Backyard Lab headed up by mastermind Alexis Marinis has carefully crafted their visual identity, branding and all packaging elements.

Clean and crisp design attributes with vivid typography on the wall - Korres style

The spacious establishment offers high quality Greek produce such as olive oil, olives and rice with an emphasis on baked goodies ready to be consumed in-house or to-go. Table service is also available on their indoors balcony. So think the magic Greek phyllo sweet pastry served in a deconstructed manner or, better yet, a traditional spinach piespanakopita’ made in the Greek yaya (Greek for grandma) way. An open kitchen in the rear also serves salads, soups and hot dishes like braised lamb with crispy pancetta, yogurt and lemon confit - yum!
